What part of nec2008 covers signal wiring, such as process control signals to/from a PLC? ...and also information about such signals sharing conduits with power circuits?

I believe you are looking for article 645 in the NEC. You are not allowed to share a conduit with power and signal circuitry. In addition to the safety factor of getting the wrong wire... there is also concern of induced voltage on the signal circuit.
