I am doing a kitchen remodel and after getting new appliances, I no longer have a need for the big 240 Volt outlets. Is there an easy way I can convert them into standard outlets or do I need to pull all the wire at breaker box and start over? -Thanks (Beginner:)

Not really an 'easy' way...
The 240V outlets are wired with bigger wire than normal 15 or 20 amp outlets to carry the higher current. You have 2 hot wires, a ground, and if it is a 4 wire circuit a nuetral in the 240 outlet... hence the 240V. If you intended to use it for 120V operation you would need a different circuit breaker than what is currently feeding it... and the wire would be bigger than what would fit in a standard plug. Grand-dad always said if it isn't broke, don't fix it. Is there any reason you couldn't just leave it so that your kitchen would be able to run either kind of appliance? When you go to sell the potential buyer may like electric over gas... and it would already be prepped for that then.
