My father in law grows carrots and gives them to me, usually they are great but his last batch that he put into the freezer when they are cooked they come out all soggy and full of water !!! what did he do wrong? Confused

its possible that they suffered the same way as many soft fruits when frozen.
The water inside the plants expands when frozen and breaks down the plant making is soft and soggy when thawed.
This happens with strawberries and other soft fruit so is a good way to break them up for jam making etc.
I haven't grown many carrots since the 60s and then always cooked them fresh so have never seen this problem.

carrots like some other vegitables should be blanched for a few mins in boiling water and then dried.
