We have a 20 gallon single element water heater out at the cottage. Id like to put a switch on it so its easier to shut off in the winter months. I cant shut it off at the breaker as there are also outside lights on the same circuit. Do I need anything stronger than a 20 amp toggle switch or would that be fine?

As long as your water heater doesn't draw more than the 20A and the switch is sized for at least the size of the circuit it should be fine.
